We live in a society that has turned us into passive popcorn consumers. 🍿🍿🍿 That changes today dear popcorn loving friend. Put down the pre-bagged stuff, shut the microwave door, and learn how to make Smartbite popcorn—the best popcorn, if you ask us.
LITTLE STORYTIME: Being short has its advantages but like everything in life, it comes with some shortcomings (no pun intended). If you ever purchased a stool so that you can reach stuff in your kitchen, we hear ya, we feel ya, we've been there. In fact, we are still there.
Smartbite corn cakes are pretty much popcorn's cousins. It's puffed corn. 🌽🌽🌽 Aaand it's also boosted with either superfood quinoa or superseed chia. We may as well call it super popcorn. Speaking of corn, did you know that we use the best corn there is aka certified organic, non-GMO premium corn grown at small Italian farms. YUM! 😋
Now let's popcorn type you. 😀 You are either:
a) buying pre-popped, pre-flavored popcorn in a big bag, which is a big waste of money
b) making microwave popcorn, which is marginally better but still has a cardboard-y texture and is more expensive than it needs to be
c) only eating popcorn at the movies, where all of the seasoning is artificial and heavy-handed (and is THE BIGGEST SCAM OF ALL TIME)
d) making your own stovetop popcorn given you have enough time and mastered the technique which is 100% amazing and we are 100% proud of you
... and you are about to become...
e) making your own super popcorn which is super quick, super easy, super delicious, super ______ (insert your fave adjective here)
This Smartbite super popcorn (SSP) is everything and more but mainly it's:
〰 Wholesome
〰 Satisfying
〰 Portable
〰 Customizable
〰 Chocolate-y
〰 Coconut-y
〰 Crunchy
〰 SUPER quick
〰 SUPER delicious
TIME NEEDED: 10 minutes
INGREDIENTS
PREPARATION
1. Crumble all 24 corn cakes to bite size pieces in a large bowl.
2. Melt your vegan butter 🧈 in a small saucepan (do not bother washing it as you'll need it again for chocolate) over medium heat and pour it all over crumbled corn cakes. Using your hands, mix all ingredients together.
3. Now the fun and highly customizable part starts. We decided to go with cinnamon, sugar, chocolate 🍫 and coconut 🥥 flakes but maybe you're feeling more like hot 🥵 sauce and cheeze curds. You do you! In this step, we add cinnamon and sugar and mix everything reaaally well.
4. Melt chocolate in the sauce pan over medium heat and pour over your Smartbite popcorn.
5. Sprinkle with coconut flakes and taadaa: you are done! ✌
Did you make this recipe? We get crazy excited when you make our recipes and we always love to see how they turn out.

Eating a balanced breakfast is an important way to get your day off to a good start. Which is why we believe in planning ahead when it comes to our brekkie.
But… we're not perfect. Sometimes we have every intention to prep chia pudding in the evening but end up being too tired to actually go through with this plan. Or we forget. Oops. 😬
While we're big advocates for meal prep breakfasts, we also believe you need quick and easy breakfasts that you can make in minutes in the morning.
That’s where this Yogurt Breakfast Bowl with a side of crunchy rice cakes come in. You can prep this delish meal in just minutes, using whatever you have on hand in your kitchen. These brekkie combo has a good balance of protein, carbohydrates and fiber when you add fruits, nuts and/or chia seeds.
